Ingredients
Pearl Barley
  • 200g pearl barley
  • 300g sweet potato, peeled and diced
  • 1 head red cabbage, shredded
  • a bunch of fresh coriander, chopped
  • 250g halloumi, sliced
  • 2 red chilies, chopped
  • 2 limes, juiced
  • 2 tbsp smooth peanut butter
How it's made!
    • Rinse the pearl barley thoroughly and cook it according to the package instructions until tender.
    • While the pearl barley is cooking, preheat the oven to 400°F (200°C).
    • Arrange the diced sweet potatoes on a baking sheet and roast them in the preheated oven for 20-25 minutes, or until they are tender and lightly browned.
    • In a small mixing bowl, whisk together the lime juice and smooth peanut butter until the mixture is smooth and fully combined.
    • In a pan, fry the halloumi slices until they are golden brown on both sides.
    • In a large mixing bowl, combine the cooked pearl barley, roasted sweet potatoes, shredded red cabbage, chopped fresh coriander, and chopped red chilies. Toss well to combine.
    • Divide the pearl barley mixture among serving bowls and top with the fried halloumi slices.
    • Drizzle the peanut dressing over the top of each bowl and serve immediately.
