Ingredients

For the dough

  • 2 ½ cups all purpose flour
  • 1 teaspoon instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 1 cup warm water

For the cheese filling

  • 1 cup shredded Baladna Mozzarella
  • 1 cup grated Baladna Akawi, soaked and drained if needed
  • ½ cup grated Baladna Majdoula
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon olive oil

How it's made!

    Prepare the dough

    • In a bowl, mix warm water with yeast and sugar. Let it sit for 5 minutes until slightly foamy.
    • In a separate bowl, combine flour and salt.
    • Add the yeast mixture and olive oil. Mix until a dough forms.
    • Knead for 8 to 10 minutes until smooth and elastic.
    • Cover and let rise for 30 to 40 minutes until doubled in size.

    Prepare the filling

    • In a bowl, combine Baladna Mozzarella, Baladna Akawi, and Baladna Majdoula.
    • Add parsley and olive oil. Mix well.

    Shape the fatayer

    • Divide the dough into small equal balls.
    • Roll each ball into a small circle.
    • Place a spoonful of cheese filling in the center.
    • Fold into a triangle shape and pinch the edges to seal.

    Bake

    • Preheat oven to 200°C.
    • Place fatayer on a lined baking tray.
    • Bake for 15 to 18 minutes until golden and the cheese is melted.

    Serve

    • Serve warm as a delicious Side Iftar dish.

    Tips

    • Soaking Baladna Akawi in water helps reduce saltiness if needed.
    • Combining Mozzarella, Akawi, and Majdoula creates a perfect balance of melt, stretch, and flavor.
