BBQ Courgettes with Labneh

Courgettes
  • 500g Baladna labneh
  • 2 lemons, both juiced, and 1 zested
  • 4 tbsp olive oil
  • 4 cloves garlic
  • 2 red chillies
  • a handful of leaves oregano
  • 2 courgettes
  • 2 yellow courgettes
Savoury Granola
  • 50g oats
  • 50g hazelnuts
  • 50g sunflower seeds
  • 50g pumpkin seeds
  • 2 tbsp sesame seeds
  • 1 tbsp smoked paprika
  • 1 tbsp cumin seeds
  • 1 egg, white only

How it's made!
    • Preheat your oven to 190°C.
    • In a large bowl, combine the Baladna labneh, lemon juice and zest, 2 tablespoons of olive oil, minced garlic, chopped red chillies, and fresh oregano leaves. Mix well to combine.
    • Spread the labneh mixture evenly on a large serving plate.
    • Place the courgette slices on the grill and cook for about 5-7 minutes on each side, or until tender and lightly charred. 
    • While the courgettes are grilling, prepare the Savoury Granola. In a bowl, combine the oats, chopped hazelnuts, sunflower seeds, pumpkin seeds, sesame seeds, smoked paprika, and cumin seeds.
    •  In a separate bowl, whisk the egg white until frothy. Pour the egg white over the granola mixture and stir to combine.
    •  Spread the granola mixture out on a baking sheet lined with parchment paper.
    • Bake in the oven for about 10-15 minutes, or until the granola is golden brown and crispy. 
    •  When the courgettes are ready, arrange them over the labneh mixture on the serving plate.
    • Sprinkle the Savoury Granola over the top of the courgettes and labneh.
