Ingredients
Chicken Breast with Asparagus
  • 200g chicken breast
  • 100g asparagus
  • 70g tomato sauce
  • 30g sun dried tomato
  • 40g Baladna mozzarella
  • 150g vegetable basmati rice

How it's made!
    • Lay the chicken breast on a cutting board and, using a sharp knife, cut a pocket into the thickest part of the chicken breast, being careful not to cut through the other side.
    • Season the inside of the chicken breast with salt and black pepper.
    • Stuff the chicken breast with asparagus, chopped sun-dried tomato, and grated Baladna mozzarella cheese.
    • Heat a pan over medium-high heat and add a drizzle of olive oil.
    • Sear the chicken breast on both sides until golden brown, about 3-4 minutes per side.
    • Reduce the heat to low and pour the tomato sauce over the top of the chicken breast.
    • Prepare the vegetable basmati rice.
    • Cover the pan with a lid and let it simmer for about 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
